CHEESE & ROSEMARY SODA BREAD
Time to Bake: 35 minutes
190° Fan
Ingredients:
345g of Plain White Flour – see notes
Half a Teaspoon of Salt
Half a Teaspoon of Bicarbonate of Soda
75g Grated Extra Mature Cheddar
Half a Teaspoon of Dried Rosemary
300 mls of Buttermilk – see notes
Method:
1. Keeping back a little of the grated cheese to sprinkle on the top, place all the dry ingredients into a large bowl
2. Mix well
3. Add the buttermilk
4. Mix together until you have a soft ball of dough – if it’s a bit too dry add a little milk, the dough should be soft but not sticky. If it’s too wet add a little more flour
5. Line a baking tray with a sheet of baking parchment & sprinkle with a little flour
6. Form the dough into a round, place onto the baking tray & flatten down slightly
7. Make a deep cross in the top of the dough
8. Sprinkle the top with a little flour
9. Sprinkle over the remaining grated cheese
10. Bake in the oven 190° Fan for about 30 minutes – the bread should sound hollow when tapped on the bottom
11. Place onto a cooling tray
12. ENJOY!

Notes:
Flour – whenever you are baking with flour you should always use the best flour you can afford, it really does make a difference.
Buttermilk – usually comes in 300ml or 284ml cartons, you can use either & just add a little more milk if you need it
