FETA, MIXED PEPPER & OREGANO SODA BREAD
Ingredients:

345gms Plain White Flour
½ Tsp Bicarb of Soda
½ Tsp Salt
300mls Buttermilk
Half a block of Feta Cheese (100gms) – broken into small pieces
3 Tbsp of mixed peppers (I used Yellow & Green) – chopped into small pieces
½ Tsp Dried Oregano

Method:

1. Place the flour, salt & bicarb of soda into a large bowl
2. Mix well
3. Add the chopped peppers, Feta & oregano
4. Mix together well
5. Add the buttermilk
6. Mix together until you have a soft ball of dough – if it’s a bit too dry add a little milk, the dough should be soft but not sticky. If it’s too wet add a little more flour
7. Line a baking tray with a sheet of baking parchment & sprinkle with a little flour
8. Form the dough into a round, place onto the baking tray & flatten down slightly
9. Make a deep cross in the top of the dough
10. Sprinkle the top with a little flour
11. Bake in the oven 190° Fan for about 35 minutes – the bread should sound hollow when tapped on the bottom
12. Place onto a cooling tray
13. ENJOY!

NOTES:

Feta is quite expensive now, so I use supermarket brand reduced fat salad cheese which looks like feta & is a good substitute.
