CHICKEN LIVER PATE
The pate will keep in the fridge for 2 or 3 days, it also freezes well.
It goes particularly well with either my homemade Cheese & Rosemary Soda Bread
or Wholemeal Soda Bread toasted.
Ingredients:
400g Chicken Livers – see notes
300g Butter
1 Garlic Clove – crushed
½ Teaspoon English Mustard Powder
¼ Teaspoon Powdered Mace
¼ Teaspoon Dried Thyme
4 Tablespoons Brandy
Salt & Pepper
Method:
- Trim the chicken livers of any sinew or discoloured bits & discard. Cut the livers into pieces
- Melt a knob of butter in a non-stick frying pan
- Add the chicken livers to the pan & cook on a medium heat for about 6 minutes turning them over a couple of times
- Add the crushed garlic, stir & cook for another 4 minutes
- Transfer the chicken livers to a blender or food mixer
- Melt 150g of butter in the frying pan & add to the livers in the blender
- Add the brandy to the frying pan, give it a swirl round to pick up any bits & juices in the pan & add to the blender
- Add the spices & herbs to the blender
- Give it all a good whizz, pulsing the mixer several times until the mixtures is smooth – it’s important that it is smooth at this point, or your pate will be grainy
- Fill small pots or one large one
- Melt the remaining 150g of butter in a clean pan & pour over the pate to form a seal
- Chill well in the fridge for at least 4 hours but it’s best if left overnight before eating
- ENJOY!
Notes:
If you are making the pate to freeze there is no need to seal with butter.
To freeze – when set remove from the pot, wrap in cling film & put into a freezer bag. If you wish you can also freeze the pate in the pot, wrapping in the same manner
Sometimes I make a dish of the pate & once set in the fridge I portion it into slices & freeze.
Chicken Livers – after you have trimmed all the sinew off you should have around 400g left.
They are available frozen or fresh in supermarkets often in 220g cartons but it won’t matter if the cartons are slightly less or slightly more. They are also available fresh from online butchers.
