Ingredients:
600g Floury Potatoes
20g Butter
1 Egg Yolk
Salt & White Pepper
To Coat the Croquettes:
2 Eggs – beaten
50g Flour
100g Breadcrumbs (I like to use Panko Breadcrumbs)
3 Dishes
Method:
1. Cut the potatoes into chucks, cover with water & bring to the boil
2. Simmer with lid on for about 15 minutes until tender
3. Drain & add the butter & egg yolk
4. Mash until smooth & fluffy
5. Add salt & white pepper to taste
6. Put into a bowl & leave to go cold
7. Put the 2 eggs into the first dish, the flour into the second & the breadcrumbs in the third
8. When the potato is cold form into sausage shapes – you should get 10 – 12
9. Dip each one into the flour (shake off any excess) then the egg then the breadcrumbs – make sure they are well covered in the crumbs
10. Spray or drizzle the croquettes with a little oil
11. Place them on a baking sheet & bake in pre heated oven 180° for 20 – 25 minutes until golden.
Notes:
If preferred you can also fry these croquettes in a little oil.
You can also add grated cheese to the croquettes if liked
